There are two words that will always increase your willingness to make a homemade dessert (especially on a steamy, humid summer day): No bake.
Without cranking up the oven to 375 degrees Fahrenheit, your home will stay nice and cool — two very important qualities, if you ask us.
Beth Branch of Bethcakes blog is a baker extraordinaire based in Birmingham, Alabama. She’s fully aware of how to make one heck of a dessert — Have you seen her Cherry Birthday Cake, Whiskey Bacon Brownies, or Skillet Peach Cobbler? — and she’s also fully aware of the Southern summer heat.
That’s why this time around, Beth made a dessert concoction that’s equal parts sweet and oven-free: No-Bake S’mores Cheesecakes in Jars.
Keep reading to get Beth’s recipe and drool over these delectable treats.

I really love this recipe because it’s all the deliciousness of s’mores without any of the heat! You could definitely top these little cheesecakes with some toasted marshmallows, but other than that, this dessert doesn’t require you to turn on an oven or anything.
They’re the perfect cold treat for those hot summer days!
Where would you bring this dessert this summer?
These jarred cheesecakes are perfect for picnics because they’re so easy to whip up. Then you just put the lids on them, let them chill in the refrigerator or freezer, and by the time you get to your picnic, they’re ready to go!
As much as I love s’mores, these cheesecakes are kind of like the mess-free version, which makes them a great option for picnics as well.
S’mores have such a nostalgic feel to them. Do you have any particular fond memories of eating or making s’mores when you were younger?
I absolutely love s’mores. I always designate myself in charge of s’mores anytime there’s going to be some kind of bonfire or fire pit. I remember making them when I was younger and in Girl Scouts, at a bonfire in high school, and even during camping trips in college.
They’re such a summer staple for me, and I look forward to making them all summer long!
