No doubt buffalo wings are a tailgate staple. Here, Bailey Rae of The Local Vegan proves that the kind made from cauliflower are as delicious as your old standby. “Buffalo sauce is a must on tailgate day, and these ‘wings’ will satisfy that tangy, spicy craving,” she says.

Ingredients for the Wings
- 1 head of cauliflower
- ½ cup almond milk
- ½ cup water
- 1 cup all-purpose flour
- 2 teaspoons garlic powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- ¼ teaspoon salt
- ¼ teaspoon ground pepper
Ingredients for the Buffalo Sauce:
- your favorite hot sauce (I like Williamson Bros Hot Sauce)
- 2 tablespoons coconut oil
- ¼ teaspoon. tsp ground mustard
Preheat your oven to 425°F. Line a baking sheet with parchment paper. Wash and cut cauliflower head into bite sized pieces/florets. In a large bowl, mix the milk,water, flour and spices in a medium mixing bowl. Mix until the batter is thick. Add the cauliflower to the batter. Stir until every cauliflower floret is coated. Bake for 45 minutes until golden brown, flipping the florets over half-way through to get all sides golden brown and crispy.
While the cauliflower is baking, get your buffalo sauce ready. In a small saucepan on low heat, melt the coconut oil and mix in hot sauce and ground mustard. Remove from the heat just as it starts to melt. Stir together and set aside.
Once the cauliflower is done, remove the “wings” from the oven and serve with the buffalo sauce for dipping!
