Reese’s Favorite All-American Apple Pie Recipe

apple piePie crust adapted from Thomas Keller’s Ad Hoc Cookbook
(makes one 9’ pie)


For the pie crust:
2 1⁄2 cups all-purpose flour, plus more for rolling
1 1⁄4 teaspoons kosher salt
2 1⁄2 sticks (10 ounces) unsalted butter

For the filling:
8 large granny smith apples, peeled and sliced
1 cup brown sugar, firmly packed
3 tablespoons cornstarch
1 teaspoon ground cinnamon
A couple of pinches of sea salt
Juice of 1 lemon
4 tablespoons butter, cut into bits
